Cooking Halibut on Gigha

Watching the video I'm going to show you today I wish I had some fish in the house for the evening. But I don't, so all I can do is watch the video and may be think back to the Seafood Extravaganza at An Taigh-Osda earlier this year. In any case I'm going to take you away from Islay for an excursion to the Isle of Gigha:

DirectGighaHalibut

I guess this is from some kind of television food programme? They mention a website uktvfood.co.uk for recipes, but that didn't help me to identify the chef and his mate. What I do know is that they visited Gigha Halibut, which aims to farm sustainable Scottish Atlantic halibut. From what I read they run the only farm of this type in Scotland (and one of two in the UK), as it is a quite difficult and long process to farm halibut. They take 3-4 years to grow until the can be harvested.

Enjoy the video and whatever food (and drink) you're going to have this evening!
